I have to admit, these roasted jalapeno guacamole hamburgers taste great with an ice cold beer. I think I may have found my new favorite burger. You might think these burgers would be super spicy because of the jalapenos. But because the jalapenos are roasted, they take on a delicious sweet and lightly spicy flavor.

I used three medium sized jalapenos in this recipe. I was a bit nervous it might be too spicy. But in fact they were just right. I could have tolerated even a little more heat, so I added it in the form of cayenne pepper in the guacamole on top of the burger. Guacamole was a natural and perfect compliment to the roasted jalapeno hamburgers.

You can also use a little minced raw jalapeno in the guacamole to give it some kick. The hamburgers were made with 80/20 lean ground beef. I recommend roasting the jalapenos ahead of time to make final preparation of the burgers quick and easy.

If you are gluten free you can use a gluten free hamburger bun or skip the bun completely. Use a nice crispy piece of lettuce instead.

  1. 3 medium sized jalapenos (roasted)

  2. 1 tbsp olive oil

  3. 1 and 1/4 lb lean ground beef (more or less, 1 average supermarket package)

  4. 1/2 cup sweet onion (diced)

  5. 2- 3 tbsp fresh cilantro (chopped)

  6. 1 egg (beaten)

  7. 1 pinch salt and pepper (to taste)

  8. 1/2 clove garlic (crushed)

  9. Guacamole (amount to taste) as topping

  10. Hamburger buns and your favorite hamburger fixings

  11. To roast the jalapenos, preheat the oven to 375 F. Cut the stems off the jalapenos. Cut each one in half length-wise and remove the seeds. Place in a bowl and mix them in olive oil. Season with a sprinkling of salt. Place them on a baking tray and into the oven.

  12. Wash your hands thoroughly. Raw jalapenos are very spicy and you don’t want to get any residue into your eye by accident.

  13. After about 6-7 minutes, turn them over. Roast another 5-6 minutes. Set aside to cool.

  14. In a small food processor, add the roasted jalapenos, about 1 tsp of olive oil and a little salt and pepper. Pulse until it is chopped well. Little chunks are ok. If you don’t have a food processor, you can just finely chop the jalapenos, place into a bowl and mix in a little olive oil.

  15. At this point, you can store the jalapenos in the refrigerator for a couple days until final preparation.

  16. In a large mixing bowl, add the ground beef, onion, cilantro, roasted jalapeno, egg, salt and pepper and garlic. Mix all ingredients. Form ¼ lb patties and set aside ready for the grill. Grill the hamburgers until well done.

  17. Serve topped with homemade guacamole and your favorite burger toppings such as tomato, cheddar cheese, lettuce and a pickle.
